Every other year, or so, we like to travel with a small group of our best friends. There’s nothing better than enjoying a fun, sunny vacation with great people, learning about new cultures and taking a break from your everyday life.
One of the things I love most about our trips is that we get to try all kinds of exotic dishes. I love finding new spices and flavors that I can later incorporate into our dinner routine at home. I often bring home spice mixes and recipes I’ve received from the locals – it’s a wonderful way to look back and remember all the people you got to know during your vacation.
This recipe is originally from Peru! I haven’t been there myself but a friend of mine has, and she said this was the most delicious ice cream she ever had in her life. To be exact, this is a parfait, but we call it the Peruvian ice cream in our family. Everyone loves it!
You can tweak the recipe to your taste and possible food allergies – for example I’ve tried soy cream instead of regular heavy cream, for a friend who is lactose intolerant. The best part is, you don’t need an ice cream machine to make this!
If you were wondering about that beautiful, light green color – it’s not food coloring. This parfait is made with avocados! Apparently, in Peru they get these huge avocados that are about the size of a child’s head! I’ve never seen any of those here but if you can get your hands on them, you probably only need one… You can also adjust the amount of sugar you add to this. I only added a little, because the tropical fruit puree I used was pretty sweet on its own.
