Whole Roasted Okra

INGREDIENTS

  • 1 lb okra, washed and dried, stems trimmed
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • pinch black pepper

PREPARATION

  1. Preheat oven to 425˚F. Toss all ingredients together in large bowl.
  2. Spread okra mixture on rimmed baking sheet. Bake for 9 minutes then carefully remove from ove. Turn each piece with tongs and return to oven.
  3. Bake for 8-10 minutes or until second side is as crisp as the first. Taste and add more salt and pepper if desired.
