Four Onion Dip

As a kid I would quite literally excavate my dinner until it was clear of any and every little slice of onion. Whether I actually hated the taste that much or just stuck to my stance on principle, I’m not sure. Thankfully, my opinion on onions slowly shifted and now I cannot get enough. Raw, sautéed, roasted, or maybe best of all, caramelized– I’ll take onions in any form. So, when I heard about a recipe with many different onions all baked into a creamy dip I knew it was a must-try.

For this dip, I decided to go with four different kinds of onions: white, red, sweet, and green. They all have a slightly unique flavor profile and come together beautifully with a touch of sweetness from the brown sugar. Sour cream, cream cheese, and mayo all get mixed in to create one super creamy dip! Top it off with a sprinkle of parmesan cheese then pop this baby in the oven for 20 minutes. When the dip is bubbling and that top cheese layer is good and golden, you’ll know it’s time to dig in!
