Ritz Cracker Thin Mints

Girl Scout cookie season is far too short. Once you’ve run through of your stockpile of boxes, it just feels like there are too many cookieless months to get through. Luckily, you can easily make your own stand-ins to get you through those lonely months, and this particular recipe is not only an excellent Thin Mint replica, it’s also quick, no-bake, and only uses five ingredients. Good news all around.

The trick here is that to get that telltale cookie crunch, you’re not baking any cookies at all, you’re actually relying on crunchy, buttery Ritz crackers. It might not sound like it, but it’s a perfect replacement for the chocolate cookie.

The mint and chocolate flavor comes from the coating, so you still get the same flavor profile without going to the trouble of actually baking cookies. All you have to do is melt some chocolate chips with some coconut oil, salt, and peppermint extract and dip the crackers in the mixture.
