Spotted Pup

  • 2 cups cooked white rice
  • 3 1/2 cups whole milk
  • 1/2 cup brown sugar
  • 1 tablespoon salted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 eggs, beaten
  • 1/2 cup raisins
  1. Preheat oven to 325˚F. Combine milk, sugar, butter, vanilla, nutmeg, cinnamon, and eggs in a mixing bowl. Beat until uniform in color. Add rice and raisins and stir. Pour into a greased 8”x8” baking dish.
  2. Place a pan of hot water on the same rack as the spotted pup pan will go, then add the pudding pan. Bake for 60 minutes or until mixture is no longer watery. Serve warm or cold. Enjoy!
