Baked Honey Mustard Chicken

INGREDIENTS
  • 4 boneless skinless chicken breasts
  • 1-2 teaspoons seasoned salt, or to taste
  • 2 tablespoons olive oil, divided
  • 1/4 cup honey
  • 2 tablespoons wholegrain mustard
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon paprika
  • Freshly ground black pepper, to taste
PREPARATION
  1. Preheat oven to 375°F and grease a 9×13-inch baking dish with nonstick spray. Set aside.
  2. In a skillet over medium-high heat, heat 1 tablespoon olive oil.
  3. Season chicken breasts with seasoned salt and pepper and sear on each side until browned, about 2 minutes per side.
  4. While chicken browns, make the sauce:
  5. Stir together remaining olive oil, honey, mustards, vinegar, and paprika.
  6. Transfer seared chicken breasts to baking dish. Pour honey mustard sauce over the chicken, turning chicken over so it’s coated entirely.
  7. Cover dish with foil and bake 20 minutes.
  8. Uncover and bake until chicken is cooked through, about 15 minutes more. Enjoy!
