Yaya’s Cowboy Cake
This cowboy Cake is a great way to create a sensation amongst your chilld and their guests ! Does it seem impossible to you ? Don’t panic, it’s easier than it looks !
Super simple ! The base of the cake is made up of a big square with 4 little squares on top, made of… yoghurt cake ! Child’s play, we hear you say. All you have to do is double the quantities of a normal recipe.. (but we’re nice, so we’ll give you our one !)
Cake
2 Cups All Purpose Flour
1 1/2 Cup Sugar
2 tsp baking soda
dash salt
2 eggs (beaten)
1 can crushed pineapple
Cake
2 Cups All Purpose Flour
1 1/2 Cup Sugar
2 tsp baking soda
dash salt
2 eggs (beaten)
1 can crushed pineapple
Mix flour, sugar, baking soda and salt together. Add beaten eggs and pineapple, including juice. Mix well and pour into a seasoned 9 x 13 baking dish. Bake at 350 for 30 minutes
Frosting
I start making the frosting when the cake has about 15 minutes left to bake
1 1/2 cup sugar
1/4 cup (1 stick) butter
1 can evaporated milk (not sweetened condensed milk)
1 1/2 cup shredded coconut
1 cup chopped pecans
1 tsp vanilla
Mix all frosting ingredients except vanilla together in a 2 quart sauce pan and bring to a boil. Cook for 6 minutes. Remove from heat and add vanilla. Pour over cake as soon as you remove it from the oven.
Let cool and enjoy.
