Red Velvet Waffles with Cream Cheese Glaze

I made this recipe for my Momma on Mother’s Day last year! She is my best friend and my cooking mentor so I know she’s gonna love this Southern brunch 🙂 These chocolate waffles are rich and moist and the sweet cream cheese glaze and crunchy pecan topping makes them a decadent and delicious meal that any mother would love!
-So sorry to disappoint everyone but this is not Red Velvet. It’s a probably a yummy chocolate waffle turned red. But true Red Velvet is a distinct flavor. This recipe has way too much cocoa, no buttermilk and no vinegar. 🙁
-These were very good- I did however double the icing recipe, and still didn’t have enough for all the batter. The icing made them, for sure!!!
-If you make pancakes, be sure the batter is thick, and make the pancakes large and thick. Stack them up with the glaze in between, and the nuts on top – just like a small layer cake. It should look wonderful!

I think we used Bisquick for the waffle mix.
