Ingredients:
1 cup butter, softened
½ cup chunky peanut butter
1 cup sugar
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla extract
½ teaspoon almond extract
3 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1½ cups chopped pecans
½ cup salted peanuts
Method:
In a large bowl, cream the butter, peanut butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in nuts.
Drop by tablespoonfuls 2 inches apart onto greased baking sheets. Flatten with a glass dipped in sugar. Bake at 350° for 10-12 minutes or until the edges are lightly browned. Remove to wire racks to cool.
