Ingredients
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 tsp vanilla
- 1/3 cup cocoa powder
- 1/4 tsp salt
- 3 TBSP milk
- 1/2 cup all-purpose flour
- 1/2 cup mini chocolate chips
- 10 oz bag mini marshmallows
Chocolate Frosting
- 3 Tbsp butter softened
- 1/4 cup chocolate chips
- 2 Tbsp milk
- 1 cup powdered sugar
Instructions
-
Preheat oven to 350 degrees. Line an 8×8 pan with parchment paper and set aside.
-
Whisk together sugar and butter.
-
Add eggs, vanilla, cocoa powder, and milk and whisk until smooth.
-
Stir in flour, salt, and mini chocolate chips, stirring until flour is well incorporated.
-
Bake for 30 minutes, until brownies are set. Remove from oven.
-
Once brownies are cooked, remove from oven and spread with marshmallows. Do your best to get them even, but it doesn’t have to be perfect- you’re going to spread it around a bit afterwards. Return to the oven for about 3 minutes- until marshmallows begin to puff. (You don’t want the marshmallows to brown so keep a close eye on them.)
-
Take brownies out of the oven. Cool for about 10-15 minutes. Make the frosting.
Frosting
-
-
Combine butter, chocolate chips, and milk in a bowl. Microwave for 45 seconds. Add powdered sugar and whisk until smooth.
-
-
Pour frosting over warm brownies. Swirl gently with a spatula. You just want to spread the marshmallows around a bit and incorporate a bit of the chocolate frosting into the melted marshmallows. Let cool to set.
-
Chill in the fridge or freezer for 20-30 minutes prior to cutting for a cleaner cut. I also spray my knife with non-stick spray! ENJOY!
