Maple Walnut Cake With Buttercream Frosting
Ingredients
Cakes:
  • 2 cups flour
  • 1/2 cup butter softened
  • 1 1/2 cups brown sugar
  • 3 eggs
  • 2 teaspoons maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup buttermilk
Frosting:
  • 2 cups butter softened
  • 5 cups powdered sugar
  • 2 teaspoons maple syrup
  • 1/4 cup milk
Walnut topping:
  • 2 cup chopped walnuts
  • 2 Tablespoon butter
  • 2 Tablespoon maple syrup
Instructions
Cake:
    1. Preheat oven to 350 degrees F.
    2. Well grease three 9 inch round cake pans.
    3. In a bowl, whisk together flour, baking powder and baking soda. Set aside.
    4. In a mixing bowl, beat butter and sugar until fluffy. Add in eggs and maple syrup.
  1. Gradually, add in flour mixture and buttermilk. Alternate between the two and mix well each time they are added.
  2. Pour batter evenly into the 3 prepared pans. Bake 10 to 13 minutes or until toothpick inserted comes out clean.
  3. Let cakes cool for 10-15 minutes before removing pans. Let them cool completely on wire rack before frosting.
Frosting:
  1. In a large mixing bowl, beat butter until creamy. Gradually, add in powder sugar, maple syrup and beat well.
  2. Start with 1/4 cup milk and gradually add in until desired consistency is reached.
Walnut topping:
  1. In a skillet, melt butter.
  2. Add in walnuts and maple syrup.
  3. Coat walnuts well. Let them cook for 5-8 minutes to toast.
  4. Remove from pan and spread out evenly on a baking sheet with parchment paper
Put it together:
  1. Frost each layer with 1 cup of frosting. Frost top and sides of cake with remaining frosting.
  2. Top cake and side with toasted walnuts.
