-OWZERS! I have neither eaten nor baked a cookie like this and these were FANTASTIC! I made them last night for a gathering with co-workers tonight. These really are magical! They are the perfect amount of crunchy on the outside and divinely soft in the center. I can’t believe I made them! My room mate said – wow – these are delicious and pretty – they look like a professional made them! HA! 🙂 I made them EXACT to the recipe and it made EXACTLY 35 cookies. I used an all natural peanut butter and I wondered if that may have made extra dough. These took me a little more than 2 hours from start to finish. Next time I will wait to turn the oven on until half-way through the assembly just to keep the kitchen cooler. I did follow the advice of another reviewer and refrigerated the filling after rolling it as well as the dough. Also, I learned to flatten the dough into my palm to make it easier to insert and wrap the peanut butter filling inside. Overall these were so fun to make and worth every second. Great recipe and great to create something IMPRESSIVE with ingredients we usually have on hand! Thanks so much for sharing! Now to keep my room mate from eating them before tonight! LOL! 🙂
