In a dutch oven or large pot over medium high heat, brown sausage and onion until sausage is no longer pink. Add garlic and saute 1 minute until fragrant.

Reduce heat to medium and add basil, oregano, and tomato paste. Cook 1-2 minutes until fragrant. Add crushed tomatoes and beef broth.

Bring soup to a simmer over medium heat, then reduce heat to medium low and let simmer 10-15 minutes. Add cooked tortellini and half and half cream stirring until combined. Season soup with salt and pepper to taste and serve hot with grated Parmesan and parsley on top. Enjoy!
