We eat a ton of quinoa, and I had never even considered putting it in a Crock-Pot until reading this recipe. Such a great idea!
Qunioa, like bacon, has gained a bunch of traction in the last decade or so. It’s a full protein grain. This makes it especially beneficial to vegans and vegetarians. It is also a great gluten free alternative to things like pasta.
You can do all sorts of things with quinoa. I’ve definitely put pasta sauce over it. This recipe is enchilada quinoa. MMMM! Those yummy Mexican flavors with a great grain.
I definitely have some moral issues with quinoa. Although, I think I heard somewhere that we’re starting to grow some here in The States. That being said, I still eat it. I am a gluten free person due to food allergies. Boo. I’ve always made quinoa on the stove top. This is the first time that I’ve ever seen it done with a slow cooker. Handy!
