INGREDIENTS
1 1/3 cups all-purpose flour
1 cup sugar
1/2 cup creamy peanut butter
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup powdered sugar, divided
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon cinnamon, optional
1/2 teaspoon salt
PREPARATION
Preheat oven to 350º F.
In a medium bowl, whisk together flour, baking soda, baking powder and salt, plus, cinnamon, if using.
In a large bowl or mixer, cream together butter, peanut butter and 1 cup sugar for 3-4 minutes, or until fluffy and lightened in color.
Beat in egg until fully incorporated, then beat in vanilla extract.
Gradually mix in dry ingredients until combined.
Place powdered sugar in a medium bowl, then scoop cookies into 1 1/2-inch balls and roll each ball in powdered sugar.
Transfer cookies to baking sheet.
Place baking sheet in oven and bake for 12-14 minutes, rotating halfway through, until cookies are just firm to the touch, but still soft in the centers.
Remove from oven and let cool 15 minutes, then serve fresh or store in an air-tight container.
