Country Breakfast Skillet Casserole



2 cups milk
1 pound bulk pork breakfast sausage
1 1/2 cups cheddar cheese, grated, divided
1 cup biscuit mix
6 eggs
1/2 teaspoon oregano, dried
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper


Preheat oven to 350°F.
In a large skillet, brown sausage over medium-high heat until cooked through, about 10 minutes. Remove from heat.
Meanwhile, mix together milk, biscuit mix, eggs, 1 cup cheddar cheese, oregano, salt, and pepper in a medium bowl. Once skillet has cooled a bit, pour egg mixture over the browned sausage in the skillet.
Top with remaining 1/2 cup of cheese and place skillet in oven. Bake uncovered until a toothpick inserted into the center comes out clean, 25-30 minutes. Enjoy!
