I took this to our monthly ladies luncheon and it was a hit with the ladies AND the kids. VERY little mayonnaise (I don’t care for mayo much so I always like recipes that have little or none but still tastes great). It was awesome for a hot summer “don’t use the oven” day.
-My avocados were on the small side, so I diced them up and added them to the salad and served it with whole wheat crackers. A delicious hot summer night in Hawaii dinner! Thanks for sharing!
-Yummy! I halved it no problem and wish I hadn’t as I am sure the leftover salad would have been great with a handful of wheat thins in front of the fridge late at night when needing a little munch on something. I contemplated using a lemon but instead waited to go to the store for a lime. I am glad I did. It was so dang easy and so dang good, how could you not love it?
-Anyway!! this is good food and its right up my ally. Thanks. I’m fixing it this weekend and all Summer long. Going crabbing in the morning. Mike
