Caramel Apple Coffee Cake

Inspired by a Swiss Colony cake from years ago, this is actually my husbands invention. He comes up with the ideas, and I turn them into reality in the kitchen. 🙂
-I made this tonight with a few adjustments for what I had on hand. I was making some brownies from another website and it used caramels. I had too much caramel left, so started looking for something to make with it. I found this recipe and was happy to find I had pretty much everything already. I just bought the muffin mix this past week. 🙂 I didn’t have apple pie filling, but cut up an apple and put it in the microwave with butter, sugar and cinnamon, and it was ready to mix in. Even after marbling, I had enough caramel left to use it as frosting. My husband and sons were very pleased with it and so was I. Thank you for sharing and thanks to your husband for the idea!!
-When I made the slice I added the apples to the mix to make a batter & then followed the rest of the recipe. I used a Cinnamon Crumble Muffin Mix so just used half the crumble mix on top instead of cinnamon & used the caramel as per recipe. Delicious!! Hope this helps. Lynne
