Baklava Cheesecake
Ingredients:
For the crust:
1 cup finely ground walnuts
1 cup graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the cheesecake:
3 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
For the baklava layer:
1 cup chopped walnuts
1/2 teaspoon ground cinnamon
1/4 cup granulated sugar
8 sheets phyllo dough, thawed
1/2 cup unsalted butter, melted
For the syrup:
1/2 cup honey
1/2 cup water
1/2 cup granulated sugar
1 teaspoon lemon juice
For garnish:
Whole walnuts
Fresh mint leaves
Instructions:
Crust: Combine walnuts, crumbs, sugar, and butter. Press into a springform pan.
Cheesecake: Beat cream cheese, sugar, and vanilla. Add eggs. Pour over crust.
Baklava Layer: Layer phyllo with butter, top with walnut mixture. Cut, place on cheesecake.
Bake: At 325°F for 60 mins. Cool.
Syrup: Boil honey, water, sugar, lemon. Cool slightly, pour over cheesecake.
Garnish: Decorate with walnuts and mint.
