I am a huge fan of crockpot meals, especially this time of year. I don’t know about you, but I am really busy during the holiday season. The last thing I want to worry about is dinner. This recipe is super easy and tastes great. Chicken slow-cooked in chicken gravy mix, cream of chicken soup, and chicken broth. Serve the shredded chicken over rice and dinner is done. I used Uncle Ben’s Ready Rice, and dinner was ready in less than 5 minutes after walking in the door! Can’t beat that any time of year!
*Ingredients:
°6 boneless, chicken breasts
°10 ¾ ounces reduced fat cream of chicken soup mix
°2 packets chicken gravy mix
°2 cups of water
°Salt and pepper to taste
°1 ½ teaspoon garlic powder
°1 ¼ teaspoon onion powder
*Instructions
FIRST STEP:
In the slow cooker, combine the cream of chicken soup, the two packets of sauce mix and 2 cups of water
Whisk to mix well
SECOND STEP:
Sprinkle onion powder and garlic powder, mix again
Place the chicken breasts on the soup mixture
THIRD STEP:
Cook over low heat for 8 hours or over high heat for 4 hours.
It is best when served over mashed potatoes, rice or pasta.
FOURTH STEP:
If desired, place a choice of fresh or frozen vegetables during the last hour of cooking.
If you are using fresh vegetables, continue to check the doneness of the vegetable. You don’t want to end up with soggy vegetables.
