This cornbread tamale pie is not only easy, it’s the culmination of the classic dish, reimagined into casserole form. Trust me, this dish is always a crowd favorite!

To get started on this easy weeknight dinner, preheat the oven to 350 degrees F. Coat a 2-quart baking dish with cooking spray. Next, it’s time to make the filling!

Heat olive oil in a large pan over medium heat. Add ground beef and season with salt and pepper to taste. Cook for 4-5 minutes, then add onion and cook for another 4 minutes or until the onion has softened and meat is cooked through. Add garlic and cook for an additional 30 seconds.

Stir in taco seasoning, enchilada sauce, beans, and corn. Bring to a simmer and cook for 5 minutes. Pour beef mixture into prepared baking dish and spread into an even layer.
