A cobbler is a dessert where some syrupy fruit is topped with some batter and baked into deliciousness, right? Usually, yes, but this particular cobbler is just the opposite – it’s upside-down! In our Upside-Down Peach Cobbler, the batter forms the bottom layer and the fruit goes on top, so you end up with a sturdy and sweet cake base that bubbles up through the fruit as it bakes. Same ingredients, different configuration, every bit as delicious.
You can use any type of fruit for this, but we’ve used peach which happens to be my favorite kind of cobbler (though blackberry is very close behind it). The fruit gets simmered with some sugar and lemon juice just long enough for it to get syrupy and soften up it a bit. And then you set it aside. Because in this case, the fruit doesn’t go first.
