– I made this again yesterday it was so good, BUT, when I strained the juices off I kept & chilled the juices in the fridge. Then today I skimmed off any fat, added a few more spices & heated with about 2 Tbs. tomato paste, 1 Tbs. anchovy paste, garlic paste & some cornstarch & made the best ever enchilada sauce! Best second dinner ever! Waste not-want not I say!
– I also made this for Sunday dinner and it was outta sight! I made a burrito for my husband and open faced tacos for myself on a bed of lettuce with sour cream, onion, cilantro, avocado and cheese. Marvelous and I still have enough left for tacos for lunch today. Thanks for this wonderful recipe.
