Peanut Butter Candy Cheesecake

Ingredients:
1 1/2 cups chocolate cookie crumbs
1/4 cup unsalted butter, melted
2 cups creamy peanut butter
1 cup confectioners’ sugar
1 cup heavy cream
1 teaspoon vanilla extract
8 ounces cream cheese, softened
1 cup chopped Reese’s candies
1 cup dark chocolate chips
1/2 cup heavy cream (for ganache)
Additional Reese’s candies for garnish
Melted chocolate for drizzle
Directions:
Combine chocolate cookie crumbs with melted butter and press into the bottom of a springform pan to form a crust. Freeze for 10 minutes.
In a bowl, mix peanut butter and confectioners’ sugar until well combined. In a separate bowl, whip 1 cup heavy cream to stiff peaks, then fold into the peanut butter mixture along with vanilla extract.
In another bowl, beat cream cheese until smooth and fold into the peanut butter and cream mixture. Stir in chopped Reese’s candies.
Pour the mixture over the crust and smooth the top. Freeze for 2 hours or until firm.
For the ganache, heat 1/2 cup heavy cream until it just begins to simmer. Pour over dark chocolate chips, let sit for 5 minutes, then stir until smooth.
Pour ganache over the cheesecake and garnish with additional Reese’s candies. Drizzle with melted chocolate.
Chill in the refrigerator for at least 4 hours before serving.
