Pasta Slaw

We came up with this recipe after eating pasta slaw at Nordy’s BBQ. Neither my husband nor the kids would really eat Cole Slaw until we tried this recipe. Now, it’s a family favorite that we make regularly. My father will ask for a little of the dressing to put on his hamburger. He says it tastes like a Frisko Freeze hamburger.
-I added 1/4 cup of dried cranberries to ours and I could make a meal on it. As to the sex of bell peppers, there is no sex to the peppers. For sweeter bell peppers always use those which have ripened. All bell peppers will be green before ripening. The natural sugars in bell or any, including hot, peppers develop when they ripen and turn whatever color they are supposed to be.When their color has developed they also develop more antioxidants.
-Mine is chillin’ in the fridge at the moment butof course I had to taste it, SO GOOD! I did tweak the recipe a bit but wanted to stay close to the original. I used 1# bagged coleslaw mix, 1 Orange pepper (not fond of green) the yellow & orange ones are little sweeter I think. 1/4 c of sugar (has anyone tried Stevia?) I rarely have celery, so I put about 1 heaping tsp of celery seed in my dressing which I like better, and I used Miracle Whip. I added a squirt of Chardonnay Honey Mustard and a squirt of Sriracha for a little kick 🙂 rather than use salt & pepper I used Cavender’s Greek seasoning (if you don’t know what that is, you should hehe)
I am hoping this will get me over my recent Amish Macaroni Salad addition lol it not the best thing for my blood sugar. I am pretty sure I will be adding some crab or shrimp to the leftover too. For now it is the side dish with my labor day BBQ Burgers.
