This is a favorite salad I make often. It’s so versatile you can really make it your own easily! Make sure to taste the dressing as your making it to adjust to your liking! And add as little or as much as you’d like. I also added about 1/2 cup or so of cooked wild rice to the mix this time and it was excellent!
-I am confused as to why there are supposedly different versions, one is Lindsey’s Original and then the other?? They looked the same from what I could see between site pages. Someone clue me in?? Thanks, Jean
-Any bean your family likes would probably work for this.. Black, kidney, cannellini… You could try lentils as a sub. Or just omit them all together! Hope this helps!
-sorry bout that! I tend to use most of the dressing.. We like it well dressed.. It would be good for a lettuce salad or maybe a diff. version of an orzo or another noodle salad? I’m sure it would keep well in the refrigerator in an air tight container for a while until you decide what to use it for!
