Kentucky Apple Cake

When my mother passed away, a close family friend made us two fantastic cakes. This apple cake is one of them! Both my father and my boyfriend couldn’t stop raving about this one and said they could eat this cake all day, every day. When I took this cake to work for a carry-in, a coworker said it was the best thing she’s ever had in her mouth. I told her she’s a newlywed, so she better be careful what she says 😉
-Haven’t made this cake, but have eaten it and it is delicious…..my rider to work, his Mom made it and he brought it to work all the time…..never any left……they cleaned the pan….hoping to make this soon….,
-I made this cake today. It didn’t seem moist enough to put in pan. However I went ahead and finished it. After the glaze it was so delicious but the top was still a bit lumpy. I ill try again soon but this one did not last very long.
-I have read almost all the comments on this cake. Do you have to peel the apples or not? I saw where the question was asked with another, but didn’t see anything about the apple peel. Just wondering. Also…I live in Farmington, New Mexico and unfortunately, HIGH ALTITUDE!! Does anyone know what conversions I would need to make for this recipe? I am in the process of making it right now. I am hoping it will turn out ok.
