Homemade Spice Rub
10 minutes, active; 35 minutes, inactive to prepare serves 4
8 medium chicken drumsticks, skin intact
2 tablespoons extra virgin olive oil
1 tablespoon salt
2 teaspoons black pepper
1/2 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dried thyme
1 tablespoon dried crushed rosemary
Preheat oven to 425°F. Coat the bottom of roasting pan with olive oil.
Rinse chicken and trim off excess skin. Pat dry with paper towels.
Combine salt, pepper, paprika, garlic powder, onion powder, thyme and rosemary in a small bowl. Liberally season chicken on all sides with spice mixture.
Arrange chicken in roasting pan and bake 35 minutes or until internal temperature registers 165-185 °F.
