Beef Dorito Casserole

INGREDIENTS
  • 1 lb lean ground beef
  • 1 yellow onion, diced
  • 1 red pepper, diced
  • 1 (1 oz) package taco seasoning
  • ½ cup water or beef broth
  • 1 (14.5 oz) can tomatoes and green chiles, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • ¾ cup sour cream
  • 1 (9 oz) bag cool ranch Doritos
  • 3 ½ cups shredded Mexican blend cheese
  • sour cream and salsa for topping
PREPARATION
  1. Preheat oven to 350 degrees F and grease a 9×13 baking dish.
  2. In a large skillet over medium heat, add ground beef. Break apart and cook until browned, then drain grease.
  3. Return pan to stove and add bell pepper and onion. Continue cooking for 3-4 more minutes until onion has softened.
  4. Add taco seasoning and broth. Reduce heat to low and let simmer 5-6 minutes until mixture has thickened.
  5. Add canned tomatoes, sour cream, and beans. Stir to combine and remove from heat.
  6. Slightly crush about 1 cup of doritos and spread them in the bottom of the prepared baking dish.
  7. Spoon half of the skillet mixture over the chips in an even layer, then top with another layer of crushed doritos and half the cheese.
  8. Spoon on the remaining skillet mixture and top with the remaining chips and cheese.
  9. Bake for 25-30 minutes or until bubbling and starting to brown.
  10. Serve hot with sour cream, salsa, hot sauce, and green onions.
