Bailey’s Irish Cream Fudge

This is the creamiest fudge ever and is sure to put a smile in those Irish eyes. The alcohol does not burn out of this very much, so I wouldn’t recommend this for the wee leprechauns in the houselhold. Fantastic to give away for St. Patrick’s Day gifts.
-I made this last night and definitely cooked as long as the recipe indicated, and there was definitely no humidity problem here. This morning, I don’t think I can cut it into pieces. It is just too soft! And I was going to send it in a package to my daughter-in-law! I sure can’t eat this whole pan!
-Maybe the people who had difficulty with this fudge be that they are not stirring it for the 10 minutes. I stir the butter, sugar, evaporated (carnation) milk until it starts to boil THEN I set the timer for 10 minutes and stir the whole ten minutes keeping it on a slow boil. (NOT A SIMMER) It works every time.
-I made this on Tuesday and it is absolutely wonderful. I followed the recipe to the letter and had no problem with the fudge not setting up as some have indicated. I would imagine the humidity might affect the outcome or getting overly eager and not boiling enough.

We gave it five stars and think it is definitely worthy of the Blue Ribbon. Going to make this again for Easter. Thank you for the great “melt in your mouth,’ recipe Heather.
