My Favorite Lasagna

1 1/2 lb ground beef
1 lb hot ground sausage
2 clove garlic, minced
2 can(s) whole tomatoes (14.5 oz)
2 can(s) tomato paste (6 oz)
2 Tbsp dried parsley
2 Tbsp dried basil
1 tsp salt
3 c cottage cheese, lowfat
2 eggs, beaten
1/2 c grated parmesan cheese
2 Tbsp dried parsley
1 tsp salt
1 lb sliced mozzarella cheese
1 pkg lasagna noodles

1. Bring large pot of water to boil.
2. Meanwhile, in a large skillet, combine ground beef, sausage, and garlic. Cook over medium-high heat until brown. Drain. Add tomatoes, tomato paste, 2 tbsp parsley, basil and salt. Simmer for 45 minutes.
3. Meanwhile, in a medium bowl, mix cottage cheese, beaten eggs, Parmesan, 2 tbsp parsley & salt. Mix well. Set aside.
4. Cook pasta until al dente.
5. Arrange 4 lasagna noodles in bottom of a casserole dish (13×9, sprayed with cooking spray) Spoon half cottage cheese mixture on top of the noodles. Cover cottage cheese with half the mozzarella. Spoon half the meat over the cheese.
6. Repeat layers, ending with meat mixture. Sprinkle the top with extra Parmesan.
7. Bake for 20 to 30 minutes at 350 degrees F.
