WHISKEY BBQ SAUCE

INGREDIENTS
1/2 small yellow onion, minced
4 cloves garlic, minced
3/4 cup bourbon whiskey (I used Jack Daniels)
1/2 teaspoon fresh ground pepper
1/2 tablespoon kosher salt
2 cups ketchup
1/4 cup tomato paste
1/3 cup apple cider vinegar
2 tablespoons liquid smoke
1/4 cup Worcestershire sauce
1/2 cup packed brown sugar
Dash of hot pepper sauce
INSTRUCTIONS

Over medium heat in heavy bottom sauce pan, cook onion and garlic in whiskey until tender and translucent, about 10 minutes. Mix in remaining ingredients and stir.
Bring to a boil, then reduce heat to a simmer and cook for 1 hour.
This recipe can be doubled, tripled or quadrupled, if desired, and canned in a water bath for future use.
