Ingredients:
For The picadillo :
1.5 lb ground beef
5 Roma tomatoes
1 onion halved
1 small onion chopped
4 garlic cloves
2 jalapeños optional
1 Serrano pepper optional
Handful cilantro
1 c chicken stock
1 tsp cumin
1 tsp Mexican oregano
S & P to taste
For The Flour tortillas :
4 cups of all purpose flour
1 tsp of salt
1tsp of baking powder
1 cup of vegetable shortening
1 cup of warm water
Directions:
For The picadillo :
Brown beef on a large skillet.
While meats browns, boil tomatoes, halved onion & jalapeño.
In a blender, combine boiled veggies, cilantro and blend.
To the meat, add chopped onions, chopped garlic and blended tomato salsa & chicken stock.
Add spices and combine, bring to a boil and simmer until potatoes are tender.
For The Flour tortillas :
Mix all dry ingredients
Add vegetable shortening and mix well with dry ingredients
Add warm water until you get a dough consistency
Let it rest inside a ziploc bag for at least 1 hour before making them.
After resting them form small balls and extend and cook on griddle. Turn when you see bubbles.
