My mom probably made a pot roast once a week as I was growing up. Apparently the roast meat was affordable and then she just threw in the classic potatoes, onion and carrots. I loved having the meat atop the potatoes smashed, and then gravy drizzled over. This meal certainly never got old for me.
Now that I’m grown I make this for my family, but mostly once a week. I use the classic method my mom did, but when I saw this recipe I decided to try it. The differences were minimal to be honest, and I was in heaven just like when I was a little girl. My kids also love beef pot roast, it’s just a comfort classic that should be on everyone’s menu! I’ve never tried it with sweet potatoes and parsnips but I did this time and I was pleasantly surprised. You really can’t go wrong by adding any type of root veggie.
