Summer fun has begun, so we teamed up with Chex™ to create three summery Muddy Buddies mixes inspired by our favorite ice cream flavors: Birthday Cake, Orange Creamsicle, and Cookies & Cream. These sweet treats won’t melt — so put out a bowl at a pool party or take them along with you as you cross adventures off your summer bucket list.
Muddy Buddies are the perfect recipe to have in your back pocket for hot days, because you can make them in less than 10 minutes using just your microwave — which means more time for enjoying the sunshine. These recipes are so easy, they’d be a great cooking project for kids to tackle themselves on boring summer afternoons (and would make a yummy midnight snack for summer slumber parties). Muddy Buddies are pure fun, so don’t let the season pass you by without trying all three of our summery flavors.
Birthday Cake Muddy Buddies would be a perfect treat for summer celebrations — but that doesn’t mean you have to wait for a birthday to roll around to make this cake-flavored treat. How do we make the Chex cereal taste exactly like birthday cake batter? By coating it in real cake mix and tons of cute rainbow sprinkles! And if you’re the type who’d rather lick the spoon than bake a cake, you’re going to love how quick and easy it is to whip these up in the microwave.
Birthday Cake Muddy Buddies
Serves 10

Total Time: 8 Minutes
Ingredients
1½ cups vanilla chips (white chocolate chips are also OK)
1 teaspoon vegetable oil (you can substitute coconut or other oil)
5 cups Rice Chex™ Cereal
½ cup rainbow sprinkles
¼ cup powdered sugar
¾ yellow cake mix
Directions
In a small bowl or microwave-safe measuring cup, combine the vanilla chips and the oil. Microwave on high, stirring every 30 seconds, until it’s completely melted and smooth.
Place the Rice Chex in a large bowl and add the melted vanilla chips mixture. Stir gently to evenly coat the cereal.
Add the sprinkles to the cereal and toss until they’re evenly coated.
Place powdered sugar and cake mix in a large resealable plastic bag. Add the cereal mixture, seal the bag, and gently shake it until the cereal is evenly coated. (Discard any extra sugar.) Let the Muddy Buddies dry completely before sealing them in an airtight container.
