Soft and Chewy Brownie Cookies

  • 2/3 cup shortening
  • 1/3 cup cocoa powder, unsweetened
  • 1 tsp vanilla extract –
  • 2 large eggs
  • 1 tblsp milk –
  • 1 1/2 cups brown sugar, packed
  • 1 1/2 cups all-purpose flour –
  • 1/2 tsp baking sooda
  • 1/2 tsp salt – 1/2 tsp
  • 6 oz semi-sweet chocolate, white, chopped,     


  1. Heat oven to 350 degrees. In a large mixing bowl beat shortening, brown sugar, milk, eggs and vanilla until well blended. Gradually add flour, cocoa, salt and baking soda on low speed until blended. Do not over mix. Stir in chocolate chunks. Make a disc that is between 1/2 and 3/4 of an inch thick and about 2 inches wide and place it on to a lightly greased cookie sheet. Bake for 12-14 minutes or until cookies are set around the edges. Cookies will appear underdone. Do not over bake. Allow to cool on baking sheet for at least 5 minutes and then place on a wire rack. Cool completely.
