Ingredients:
– 5 Medium Peaches (Diced)
– 1 Large Jalapeño Pepper
– 2 Nine-Inch Pie Crusts
– 1 Cup Sugar
– 1/3 Cup Flour
– 1/3 Cup Butter (Melted)
– 1 Large Egg (Beaten)
Instructions:
Preheat the oven to 375 degrees. Coat a muffin tin with cooking spray or use paper baking cups to prevent sticking. In a medium bowl, combine flour, sugar, beaten egg and melted butter. Add diced peaches and finely chopped jalapeño pepper to bowl mixture. (If jalapeños are mild, supplement with 1/8 to 1/4 tsp. of cayenne pepper according to preference). Roll and flatten out the pie crusts on a lightly floured surface. Cut 6 inch circles using a cookie cutter. (Combine left over pie crusts into a ball and roll out with a rolling pin to create more circles). Lightly press and form 6 inch pie circles in the muffin tin or paper baking cups. Add 3 tablespoons of peach and jalapeño mixture into each mini pie. Optional: Roll out the other pie crust and smooth them out using a rolling pin. Using a sharp knife, cut out hearts and strips to cover the pies. Top the pies with the crusts. Bake 20 -30 minutes, depending on oven variation.
