INGREDIENTS
- 2 pounds baby carrots
- 1/3 cup walnuts, roughly chopped
- 1/4 cup high quality maple syrup
- 2 tablespoons unsalted butter, melted
- salt, to taste (optional, sea salt, for garnish)
- freshly ground pepper, to taste
PREPARATION
- Preheat oven to 400º F.
- Pat carrots dry with paper towels and place on a baking sheet.
- In a small bowl, whisk together maple syrup and melted butter.
- Drizzle maple syrup mixture over the carrots, reserving a small amount for later. Then season with salt and pepper, and toss to coat thoroughly.
- Place in oven and bake for 20 minutes.
- Add chopped walnuts and toss again to make sure they’re incorporated and everything bakes evenly. Glaze with remaining maple syrup.
- Bake for another 10-15 minutes, or until carrots are glossy and tender.
- Remove from oven and garnish with sea salt.
- Serve warm.
