* ingredients:
° 1 1/3 Si flour
° 2 tons of cayenne pepper
° 2 tons coarsely ground black pepper
° 1/3 C (plus a little) chili powder
° 2 1/2 teaspoons onion powder
° 1 1/2 tsp salt
*Each of these measurements are approximate – I tend to cook by eye, but this time I tried to measure while contemplating the quantity
° 1 large bottle of Frank’s Hot Sauce
° 1 piece butter
* Directions :
blend dried ingredients in gallon ziplock bag.Putting 12 wings in a bag, covering & shake to all portions are totally covered with spice mixture.Remove excess flour through a sieve.I usually put 3 or 4 pieces on a sieve and shake until only a thin layer remains.By the way, I usually put a paper towel in the sink and wring it out.When ready, most of the powdered seasonings are wrapped in paper towels and easily transferred to leftover dough bags and trash.
Place the wings on a standard plate and refrigerate for 30-40 minutes.After 30 minutes, pour about 1/2 ton of vegetable oil into a standard pie plate (technically a jelly roll).Grease the pan with a broom or slide the pan back and forth.After cooling for 30 minutes, repeat the seasoning process by adding a second layer. Shake off the excess and place them side by side in the prepared oiled frying pan.
Preheat oven 375 degres.Flip the wings once in a skillet to grease with oil on both sides.
Place in an oven at 375 degrees and set a timer for 60 minutes.After cooking for 30 minutes, remove from oven briefly and turn each serving until crispy and overcooked.
Mix 1 bottle of Frank’s RedHot Sauce with 1 stick of butter in a small saucepan. Heat until butter melts.After 60 minutes (total), remove the chicken from the oven and let it rest for 5 minutes.During the 5 minute break, prepare a “serving platter” and a “plate of sand”. A long time ago, I started to put a paper towel inside a grocery/plastic bag and put it on the baking tray. Cleaning is quick and easy!After 5 minutes, put all the wings into a metal or glass dish. Pour the sauce mixture over the wings.
Put them on a serving plate.
