Making this easy pumpkin cake from scratch is simple. start out using a large mixing bowl and beat shortening, sugar, eggs, vanilla and pumpkin puree until creamy. In a medium mixing bowl, whisk the flour, baking powder, baking soda, cloves, cinnamon, nutmeg and salt together and set that aside. Mix the flour mixture into the pumpkin mixture and stir until well combined. Stir in walnuts then spoon into prepared pans. Fill ¾ full (mixture will be thick). Bake at 300° for approximately 1 hour 10 minutes or until a wooden tooth pick inserted in the center comes out clean. Remove from oven and let cool in the pans for about 10 minutes, then remove from pans and place of cooling rack to cool completely then frost.
