GREEK GRILLED EGGPLANT
INGREDIENTS
- Eggplant
- Olive oil
- Salt
- Pepper
- Chili powder
- Cucumbers
- Feta
- Tomatoes
- Chopped parsley
- Lemon juice
DIRECTIONS
- Slice a thick piece of eggplant.
- Coat the eggplant in olive oil, salt, pepper, and chili powder.
- Grill the eggplant for four minutes on each side. You should see nice lines and the eggplant should be tender.
- Top your eggplant with diced tomatoes and cucumbers, feta, parsley, and lemon juice.
