Grandma Hibbs Texas Teacakes

Grandma Hibbs Texas Teacakes
Submitted by Jim Hibbs of Elgin, Texas
I am sixth generation Texan, and this is my Great Grandmothers teacake recipe. I grew up with these and baked them every Christmas with my daughter and this year I did them with my granddaughter for the first time! I cut the cookies every year with a small goblet my Great Grandmother gave me.
PS…My pup 13-year-old Chester, named after the Gunsmoke Chester because he has a bad leg, always gets the first Christmas Teacake. He remembers it every year and waits for the first batch.
Ingredients:
* 3 1/4 cups flour
* 1 tsp baking soda
* 1/2 tsp salt
* 1/2 cup butter
* 1/2 cup sugar
* 1 egg
* 1 tsp vanilla (Mexican if you got it)
* 3/4 cup sour cream
Directions:
1) Mix ingredients (dry ingredients first)
2) Save 1/4 cup of flour out to use when rolling out the dough and flour both side before baking.
3) Cut out cakes with a small glass (or a goblet if you have it).
4) Bake at 350 degrees for 20 minutes.
5) Enjoy and be sure to Thank Grandma Hibbs for passing this Texas tradition down to her children and ancestors… and now YOU!
