Chocolately and Nutty Banana Muffins

INGREDIENTS
  • 3 medium bananas, ripe, mashed
  • 1 large egg –
  • 1/3 cup oil
  • 3/4 cup sugar –
  • 1 1/2 cups all-purpose flour –
  • 1 teaspoon baking soda –
  • 1 teaspoon baking powder –
  • 1/2 teaspoon salt –
  • 1/2 cup pecans, coarsely chopped more or less to taste
  • 1/2 cup chocolate chips more or less to taste
  • cooking spray or butter, for greasing

 

INSTRUCTIONS
  1. Preheat your oven to 350 degrees. Prepare your muffin pan with butter or cooking spray. In a large bowl combine mashed bananas, egg, oil and sugar. Stir until smooth. Next add flour, baking soda, baking powder, salt and stir until totally incorporated. Spoon into your prepared muffin pan. Bake for 20 minutes. Allow to cool in your pan for at least 5 minutes. These muffins freeze beautifully. Serve and enjoy!
