Cherry Coke Cupcakes

Ingredients

  • 10 oz Jar Maraschino cherries, drained, ½ cup liquid reserved
  • 1 box Devil’s food cake mix
  • 1 cup cola
  • ½ cup vegetable oil
  • 3 eggs, room temperature

For the cherry frosting:

  • 1 cup butter, softened
  • 3 cups powdered sugar
  • ¼ cup reserved cherry juice
  • 24 maraschino cherries with stems, drained
  • Sprinkles or Chocolate shavings, if desired

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Line two muffin pans with cupcake liners. Set aside.
  2. In a large bowl, beat together the food cake mix, cola, ¼ cup reserved cherry liquid, oil, and eggs until just combined with a whisk.
  3. Fill liners 2/3 full and add 1 maraschino cherry to the middle of each.
  4. Bake for 20-22 minutes, or until a toothpick inserted in the center of one cupcake comes out clean. Cool completely.
  5. In the bowl of a stand mixer, cream the butter, then add the powdered sugar and mix on low.
  6. Add the remaining reserved cherry juice slowly, until the frosting is light and fluffy.
  7. Transfer frosting to a piping bag and frost each cupcake.
  8. Sprinkle over each cupcake with sprinkles or chocolate shavings, and top with another maraschino cherry.
