Cheesy Shrimp Casserole Recipe

Ingredients

  • ½ lb shrimp, peeled and deveined
  •  cups elbow macaroni, cooked and cooled
  • 2 cups cheese, mixed, of your choice, (used mozzarella and cheddar cheese), shredded and divided
  • ½ cup parmesan cheese, grated or powdered
  • 1 egg, beaten
  •  cup half-and-half
  • 2 tbsp unsalted butter, melted
  • 1 cup mozzarella cheese, divided, shredded
  • 1 clove garlic, minced
  • salt and ground black pepper, to season

To Serve:

  •  tsp parsley, per serving

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a mixing bowl, whisk half of the mixed cheeses, parmesan cheese, half-and-half, egg, butter, and garlic together.
  3. Add the shrimp and cooked pasta. Season with salt and pepper, then toss to combine evenly.
  4. Transfer to a baking dish and sprinkle on the rest of the mozzarella.
  5. Bake for 25 minutes until the shrimp are pink and the cheese is melted.
  6. Garnish with parsley and serve.
