INGREDIENTS
Cake:
2 1/2 cups flour
1/2 cup sugar
1/4 teaspoon salt
3 large eggs
3 tablespoons unsalted butter, melted
1 (14 oz.) can sweetened condensed milk
1 (5 oz.) can evaporated milk
1 cup coconut milk
1 teaspoon vanilla extract
Glaze:
1 cup coconut milk
2 tablespoons sugar
1 cup shredded coconut
1 teaspoon vanilla extract
PREPARATION
Preheat oven to 350º F and lightly grease a baking sheet with butter or non-stick spray.
Whisk together flour, sugar and salt in a large bowl, then beat in eggs and melted butter.
Mix in evaporated milk, and coconut milk and sweetened condensed milk, then stir in vanilla extract.
Pour batter into greased sheet pan and place in oven. Bake for 16-18 minutes, or until toothpick inserted in center comes out clean.
While cake bakes, heat a large saucepan over medium heat and combine coconut milk, sugar, coconut and vanilla extract until sugar has melted and mixture is fully incorporated.
Remove cake from oven and pour icing over the top, then set aside and let cool. Slice into squares, serve and enjoy.
