All I can say is MMMMM!
-Carolyn, according to my mathematical calculations, this could work in a 9×13 pan it would be 1 1/2 inches thick. In an 8×8 pan (half a recipe) would make it 1.36 ” thick. (or you could make two 8×8 pans.) I have not tried this myself. I am just saying that volume wise it would fit in the pan. In the recipe as written the 9×3 spring-form pan the cheesecake is 2.75″ thick. You would need to adjust the baking times accordingly. I hope this answers your question. Let me know how it turns out.
-M husband loves cheesecake and, because he has diabetes and I have fibro, we abstain from sweets and wheat products most of the time. I wanted to do something special for him for Valentine’s Day, so I made his favorite meal…steak on the grill, wild rice, steamed broccoli and, for desert, this special cake. It was incredibly delicious and he loved it.

I did make a couple of changes to it, though. I saved a few Oreos and crumbled them, putting them in the filling, instead of brownies. I also wanted to eliminate wheat wherever I could, so I used cornstarch in the filling instead of the flour. I wasn’t sure it would work, but it did. I am not a fan of cheesecake and I enjoyed this very much. It was delicious.
-Ok, I’ll admit I’m guilty of scoffing at those who cannot follow a recipe and then post negative comments when they’re not satisfied with the finished product. So, Karma came back to bite me when I brought out the appropriate springform pan for this recipe, measured it with a ruler to be sure, and then had way too much batter for the pan. Probably because my eyesight isn’t 20 years old anymore and it said 9″, not 8″ pan! Not to worry – I was using mini-muffin sized brownies for the filling, so I simply flattened several and placed them in cupcake liners, filled with the leftover batter, and had more goodness to enjoy! This cake is absolutely divine – I served it to company this evening after dinner and they took the remaining half of the cake home for their children. This recipe is a new favorite, and I enjoyed it with semi-sweet chocolate on top instead of milk chocolate. Great share!
