AMAZING SPINACH MUSHROOM FETA CRUSTLESS QUICHE

Serves: 6
INGREDIENTS
  • 1 tbsp olive oil
  • 1 cup yellow onion, chopped
  • 8 oz. mushrooms, sliced
  • 10 oz. pkg. frozen spinach, thawed and drained
  • 8 oz. feta cheese, crumbled
  • 3 whole eggs
  • 3 egg whites
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1/2 tsp dried oregano
  • 3/4 cup milk
INSTRUCTIONS
  1. preheat oven to 350 degrees F
  2. heat olive oil in a large skillet
  3. add the onion into the skillet and cook for 2-3 minutes
  4. remove to a bowl and set aside
  5. add mushrooms into the skillet and cook for 3-5 minutes, then remove to the bowl with the onions and set aside
  6. add drained spinach to the skillet and cook for 2-3 minutes then remove to the same bowl and allow to cool
  7. in a large bowl beat the eggs, egg whites, milk, salt, pepper, and oregano
  8. spray a 9 inch pie plate with cooking spray
  9. toss the feta cheese into the bowl with the veggies
  10. spread the veggies around in the bottom of the pie plate
  11. whip the eggs, milk, salt, pepper and oregano
  12. pour the eggs over top of the veggies
  13. bake for 45 minutes and then allow to cool for 5 before cutting
