Low Carb Breakfast Crepes With Cheese Filling

I love crepes, but cannot afford the high carbohydrate content. I’ve worked on this recipe for a while to get it as low as possible. I discovered Bob’s Red Mill Low-Carb Baking Mix which really helped, and it works well. This product is available at health food stores, or on-line. I also use the Ideal Brand Xylitol sweetener instead of Splenda, but either will work. Hope all of you enjoy this. They are quick to put together and make an elegant breakfast or brunch dish. Feel free to double the recipe if you want to serve more than two. Also, try using other fruit – peaches, blueberries, even oranges and marmalade, with a complementary preserve. -I did know that about the xylitol and dogs – I believe there is a warning on the package about it. We no longer have a dog, so I’m not as diligent, but I remember teaching our children about being careful never to give Buster anything with chocolate or xylitol in it. A good reminder!
My dentist really likes xylitol. He says it actively promotes a mouth that will not allow bacteria to grow.
